As winter settles over Gysinge and the manor house glitters in the winter darkness, we once again set the table for our Christmas buffet at Restaurant Orangeriet—a buffet where classic Swedish traditions meet the flavors of the Dalälven River, the forests, and the surrounding countryside.
Here, the focus is on fresh ingredients and craftsmanship. Drawing inspiration from the manor’s history and our unique location between Gästrikland and Uppland, we create a Christmas buffet that is truly at home right here in Gysinge. On the tables, you’ll find herring, salmon, smoked herring, and whitefish from the coastal waters near the mouth of the Dalälven River, along with local specialties such as pike and perch from the Dalälven River. We also let our culinary heritage shine through with traditional dishes and flavors rooted in the local area.
For us, a truly great Christmas buffet is all about balance. That’s why we put just as much care into our winter vegetables as we do into the classic Christmas favorites. Cabbage, root vegetables, and apples are transformed into flavorful vegetarian dishes that are an integral part of the whole experience—prepared with the same pride and love for the craft as the rest of our Christmas buffet.
The evening concludes with a lavish dessert table filled with homemade Christmas favorites and the sweet flavors that are a hallmark of the holiday season.
